Ingredients for Fruit Cake Recipe :
- 1-cup gluten-free starchy flour, white rice or tapioca flour
- 1-cup gluten-free whole grain flour, brown rice or amaranth flour
- 4 tbsp coconut milk
- 1 ½ tbsp lemon juice.
- 2 tbsp butter or coconut oil
- 2 eggs.
- ½ cup coconut sugar.
- 1 tsp sea salt
- 1 tsp baking soda
- ½ tsp cinnamon
- 1 tbsp coconut sugar
- 2 tbsp cornstarch
- 2 to 3 cups of cherries or berries
- Peeled slices of orange

Method of preparation:
- Mix milk, flour and lemon juice in a bowl.
- Cover the mixture and leave it for 7 hours.
- Take a baking bowl and grease it with butter or oil.
- Heat the microwave oven at 350 degrees.
- Now add cinnamon, tapioca flour, sugar and fruits in a bowl and mix.
- Pour the above mixture into the baking pan already greased.
- Bake it for 10 to 15 minutes.
- Now prepare toppings.
- Beat the egg in a bowl.
- Now add baking soda and ½ cup sugar to it.
- Now add this mixture to the soaked flour.
- Stir and beat it so that no lumps are left.
- Take the baking pan from the oven and spread this topping over it.
- Bake the entire thing again for 30 minutes.
- Remove the pan from the oven and allow it to cool.
