Ingredients for making the vegetable noodles:

Oil - 2 tbsp

Onion - 1 medium. Chopped

Garlic - 1tsp chopped

Ginger - 1 tsp chopped

Carrot - 1 medium chopped

Capsicum - 1 small diced or sliced

Beans- 1 cup sliced

Mushroom - 1 cup sliced (optional)

Water - ¾ cup

Cornflour - 3 Tsp

Soy sauce - 1 Tsp

Noodles - 85g packet

Procedure for making healthy vegetable noodles:

  • Take a frying pan or nonstick pan. Heat some oil in it. Put onions and stir. When the onions become tender and change the color, add garlic and ginger. Saute for few minutes. Now add all the other vegetables and again saute for a coup of minutes. The vegetables should become tender and till then keep stirring.
  • Now add water, corn flour, and soya sauce to it and mix well. Make sure that the corn flour does not become lumps and keep stirring when it cooks. When the sauce becomes thick and starts cooking turn it off and keep it aside.
  • Take the noodles and boil it in the water by following the instructions given in the outer packet. When the noodle is cooked drain it completely.
  • Now add the sauce and the vegetables into it. Stir it so that it mixes well. Serve hot with tomato sauce.
  • Your yummy easy delicious vegetable noodle is ready
