It is the main concern of every mother to give her child a healthy and yet tasty food. Kids are very choosy when it comes to their meal.
1. Firstly preheat the microwave at 350 degrees.
2. Take a pan and add some oil to it.
3. Add carrots to it and cook for 2 to 3 minutes.
4. When the carrots are soft take it from the flame and let it cool.
5. Blend the cooked carrot in food processor.
6. Make a smooth paste and add water if necessary.
7. Now add baking powder and baking soda to the paste, mix well.
8. Take flour, salt sugar, and cinnamon and add to the carrot puree.
9. Take a small bowl; add vanilla extract, oil, and eggs to it.
10. Now add this mixture to the carrot puree prepared earlier.
11. Scoop this mixture into the muffin can or tin.
12. Bake it in the preheated oven for 20 minutes.
13. Take chilled coconut milk in a mixing bowl.
14. Mix it until it becomes fluffy.
15. Add honey to it.
16. Spread this coconut frosting over the cooked muffins.
17. Cut yellow carrots and place nicely on the top.
18. You can also add the cherry on the top.
