Pumpkin Soup Recipe: Making Steps
Ingredients to prepare the Simple Pumpkin Soup
- 2 cups of onions, chopped.
- ¼ cup ginger, minced or pasted.
- 1 ¼ garlic clove, minced.
- 6 to 7 cups of vegetable stock, finely chopped.
- 5 cups of pumpkin puree
- Salt to taste
- ½ tsp fresh thyme, chopped.
- 1 tsp fresh parsley, chopped.
- 1 tbsp olive oil
Steps To Prepare Pumpkin Soup
1. Take a large pan and heat it.
2. Add olive oil to the pan.
3. Now add finely chopped onions to the bowl and cook them until they become transparent.
3. After the onions become transparent, add ginger and garlic to them.
4. Cook for 1 minute.
5. Now add 1 cup of vegetable stock to the above and cook for 6 minutes.
6. When the vegetables have become tender, add the pumpkin to them.
7. Again, cook for 1 minute and then add the remaining vegetable stock to it.
8. Add salt as per your taste.
9. Now, cook the above mixture for about half an hour.
10. Blend the soup with a hand blender until it becomes smooth.
11. Remove the soup from the heat.
12. Garnish with parsley and serve hot.
